Business Lunch Menus



There is nothing in the rules that say your business lunch can't be special and a little exotic.

The following menus were inspired by some of the rich culinary regions of the world where I have lived. Each dish has been adapted for the business lunch format, in other words, toned down without having to sacrifice on quality and flavor.

Salades

Salade Pomme de Terre Rôti 
 Roasted new potatoes, cornichon, celery,
    Parsley w/ tarragon vinaigrette.

Salade Nord Afrique 
Pasta rings, black beans, yellow bell peppers, cherry
    tomatoes served w/ a spicy North African spiced Vinaigrette.

Salade de Maman 
Rice, tuna, celery, carrots, scallions w/ a chili cilantro, soy
    sauce citrus dressing. ( Will remove tuna for vegetarian option ).

Sandwiches

Merguez Rôti 
Grilled homemade sausage served on a bed of sautéed bell
    peppers and chopped scallions wrapped in a baguette.

Le P’tit Wrap Libanais 
Grilled chicken marinated in middle eastern spices,
   grilled zucchini, pickled tomatoes, spinach wrap served with yogurt mint dipping sauce.

Sandwiche Jambon 
Grilled Dijon spiced ham served with roasted bell
    peppers & cucumber strips wrapped in a baguette.

Dessert
 
Basket of seasonal fresh fruit

Salades
 
Salade Niçoise
Baby spinach, tuna, farm fresh eggs, haricot vert, red
   potatoes w/ red wine vinaigrette.

Salade Taboulet
Fine cracked wheat, diced baby bell peppers, chick peas
    w/ cilantro based vinaigrette.

Salade Perse
Diced tomatoes, cucumber, shallots, lentils served w/
    mint based vinaigrette.

Sandwiches

Boeuf Rôti Provencal
Roast beef lightly dipped in salted butter & herb de
   Provence, served on a bed of mint pickled cucumber slices wrapped in a baguette.

Thon Côte D’Azur
Tuna tossed in extra virgin olive oil, Mediterranean spices
    & capers served in toasted pita pouches.

Poulet Marrakech
Grilled sumac dusted pork strips served on a bed of wilted
    escarole wrapped in a baguette.

Dessert

Salade de Raisin
Halved red & green grapes tossed in Southern Comfort & lime
    dressing.

Salades

Salade Indochine
Calamari rings, baby shrimp, mint pickled cherry tomatoes
   with spicy sesame oil cilantro dressing.

Salade de Crevettes
Rotinni pasta, sautéed prawns, roasted vegetables tossed
    in extra virgin olive oil, black pepper & sea salt.

Salade Turc
Vine ripened tomatoes, buffalo mozzarella, red onion slices 
    w/ extra virgin olive oil, paprika, citrus dressing.

Sandwiches

Grillade de Porc
Grilled marinated pork medallions served on bed of vine
    ripened tomatoes, served on grilled toast brushed with extra virgin olive oil, seal salt
    & garlic.

Espadon du Medina
Grilled Swordfish marinated in North African spices served
    with pickled celery root and diced marinated tomatoes rolled in grilled tortilla.

L’effilochée de Boeuf Coréen
Korean spiced shredded steak served on a bed
    of Kim chi & pickled julienned carrots wrapped in a toasted baguette.

Dessert

Crêpe Marnier
Thin rolled pancakes coated in fresh cream, hazelnut chocolate
    and fresh cream.

 -   The dessert for Menu Trois can be replaced with options from Menu Un or Menu Deux.
